Spicy Smoked Brisket

10 lb beef brisket, 10 to 12 lbs
1/4 cup(s) Brown Sugar
2 tbsp. Garlic Powder
1/3 cup(s) Paprika
3 tbsp. Salt
2 tbsp. Onion Powder
1/4 cup(s) Ground Black Pepper
3 tbsp. Chili Powder
1 tbsp. Cayenne
Directions
- Preheat smoker; add wood chips of choice. Clean and dry brisket. Combine remaining ingredients in bowl; rub into the brisket. Place brisket in smoker at 215° F to 225° F for 12 to 13 hours.
- To increase tenderness, take brisket out of smoker. Wrap in aluminum foil, and place in oven at 180° F to 200° F for the last 2 hours of cooking. Take brisket off of heat, and allow to sit for 20 minutes before slicing.
- Note: A 10 to 12-pound brisket will shrink down to about 5 to 6 pounds once cooked.
